GARLIC ROSEMARY WHITE BEANS

A simple Italian inspired dish, this white bean salad is packed with well rounded flavours.

A balanced mix of subtle flavours, this cold white bean salad is a tasty side and a great addition to any table spread. Ready in just 5 minutes, perfect when in a rush or even a healthy protein packed meal prep. A dish that you can switch up with any bean or herb you have available.
Tip: 1. A quick trick to mince garlic, turn a fork points down on your chopping board and use as a grater!
2. Use a glass jar to shake up your salad dressings! The easiest and quickest way to fully combine the different density liquids, garlic, herbs and spices etc, creating a silky texture. Any left over dressing can easily be stored in the fridge saving waste, perfect for meal prep too!
Reduce Waste: To reduce plastic, when buying supermarket herb pots, repot in fresh soil to give the plant a boost of nutrients and it will last far longer than if just left in the original soil! Easy way to get some simple wholesome gardening in, save money and cut down on plastic!
Ingredients
- Cannelloni Beans (2 cans or 400g drained)
- Red onion (1 small, 50g)
- Fresh Garlic (1 clove)
- Olive Oil (3 tbsp)
- Lemon Juice (1 Medium, 2 tbsp)
- Fresh Rosemary (Medium bunch, 3 tbsp)
- Black Pepper (1 tbsp)
- Salt (1 tsp)
Instructions
1. Drain and rinse the cannelloni beans.
2. Finely chop the red onion and add to the beans.
3. To make the dressing, finely chop the rosemary and mince the garlic. Add to a glass jar with the rest of the ingredients, then shake well until the mixture has fully combined and turned white. (If not using a jar, just add straight into the beans and onions, stir and serve).
4. Lastly add the dressing to the beans and onions, mix well and serve! that simple
