SWEET AND SPICY SALSA

Fresh, sweet, spicy - the perfect salsa.

Just in time for summer, this colourful salsa is fresh and rich in flavour. An excellent sweet and spicy addition to any BBQ, meze, Mexican mash up, Indian or even a middle eastern spread. Load on to salads, spuds (Paprika Roasted Sweet Potatoes pictured below), wraps, Buddha bowls etc etc. To be honest, there's not much I wouldn't pair this salsa with.
Packs a punch with a hit of chilli, onion and lemon, balanced out with sweet tomatoes, herby coriander and my secret ingredient, a dash of balsamic vinegar. Overall, and as always here at The Climate Change Cookbook, deliciously nutritious.
Ingredients
- Tomatoes (6 medium)
- Red Onion (1 medium)
- Fresh Chilli (half large)
- Fresh Garlic (3 cloves)
- Coriander (small bunch, 50g)
- Olive Oil (4 tbsp)
- Balsamic Vinegar (2 tbsp)
- Lemon Juice (1 medium, 3 tbsp)
- Black pepper (1 tsp)
- Salt ( 0.5 tsp)
Instructions
1. Firstly roughly chop the tomatoes, draining away the extra water.
2. Finley dice the, red onion, chilli , garlic and coriander and combine.
3. Add in all the other ingredients, combine well, serve and enjoy! Simple as.
TIP: To soften the tomatoes and fully release all the fresh flavours, I like to use my hand to combine and squeeze the mix, breaking it down slightly to a softer texture. For more of a crunch leave this step out.
